@mhoye @rstevens Sorry, I don't really pay much attention to what other roasters are doing unless they're asking for my help. I did roast a nice batch of Tanzanian coffee earlier today (my current lightest roast) but the stuff that goes to 2nd crack or beyond sells a lot better here. People can prefer different things without lacking taste, though I do feel that there's less emphasis in training on fundamental reasoning around how roasters can manipulate flavor these days.
