Working on new espresso blends is difficult these days. You have to put your mask on, make the coffee, then take the coffee away someplace where you can be alone before unmasking to take a sip of the coffee, then mask up for the next attempt, repeat until it's right. And since it's espresso, there's a limited amount of time to taste that at its best. I guess it's good for the people who count their steps.

The shop has been rolling out pre-packed bags of cookies (13 cookies in the bag for the price of 12) and the labels for that can be challenging. Peanut butter cookies, 10 ingredients, made from scratch just like Grandma would make them, but once you list out the ingredients of the ingredients and their sub-ingredients it looks like some highly engineered thing out of a chemical plant.
There was a cup on the dark end that was my favorite of the set on the first sip, but that just faded too quickly as the coffee cooled and here again, there are things that I can do in the roast to try to help with that, but it would cause other changes to the flavor that I don't think would work well with this coffee.
